Type 2 diabetes is usually explained as a sugar problem. This episode makes the case that the real story starts with insulin resistance, not the carbohydrates on your plate.
Insulin works like a key that lets glucose into muscle and liver cells. When fat, particularly saturated fat from animal products and processed oils, builds up inside those cells, the lock gets gummed up and the key can no longer turn. Glucose backs up in the bloodstream, not because carbohydrates caused the problem, but because they exposed one that was already there.
Cutting carbohydrates lowers blood sugar readings quickly because less glucose is entering the system, but it does nothing to clear the fat causing insulin resistance in the first place. A whole-food, plant-based pattern instead reduces saturated fat and raises fiber intake, allowing intracellular fat to clear and insulin sensitivity to return.
