In this episode of the Vegans Explore Podcast, we sit down with Anne, co-founder of Sen Saigon, to explore the journey behind opening New York City’s first fully Vegan Vietnamese restaurant.

Born and raised in Vietnam, Anne became Vegan and was surprised to discover that authentic Vegan Vietnamese food was nearly impossible to find in NYC. Rather than compromise, she and her husband decided to build what they wished existed.

We discuss the cultural role of fish sauce in Vietnamese cuisine, the challenges of rebuilding traditional broths using plants, and why making Vietnamese food fully Vegan requires intentional effort rather than shortcuts. Anne also shares how community support, social media storytelling, and heart-centered cooking helped Sen Saigon grow into a beloved neighborhood destination.

This episode is about honoring culture, trusting your values, and creating space for people to reconnect with food they thought they had lost.
