Speed as the root cause

Eisnitz traces most of the violations she's documented back to production line speed: hog plants processing one animal every three seconds, poultry lines eviscerating up to three birds per second, speeds so fast that ensuring an animal is fully unconscious before processing becomes nearly impossible. A minute of downtime costs a plant real money, so the line does not stop for injured workers, contaminated meat, or struggling animals. Her investigative work, including a front-page Washington Post story on cattle being skinned while still conscious, led directly to Congress funding humane slaughter enforcement in 2001, though that enforcement still receives less than 3 percent of the federal meat inspection budget.

Real wins alongside the hard material

Eisnitz is careful to note her book is not just a catalogue of abuse. It follows her personal story of living undiagnosed with a rare visual processing disorder alongside her investigative career, and closes with concrete victories: an 89 percent drop in veal production tied to a national boycott campaign her organization ran, and the successful legal blocking of what would have been the third-largest hog factory in the world on Rosebud Sioux tribal land.

The Humane Farming Association operates a 7,000-acre sanctuary, the largest farm animal refuge in the country, home to roughly a thousand rescued animals.
All three major broadcast networks worked with Eisnitz on investigative footage over the years, then declined to air the stories, citing concern the material would be too disturbing for viewers.
